Grilled Tequila Lime Chicken Recipe

This is a great Grilled Tequila Lime Chicken Recipe I came up with all on my own! I had some chicken and some other things laying around the house that I threw together as a grill recipe and it turned out great. In fact, I’ve done it several times, with slightly different amounts of each ingredient and its been a smash success every time. Try it out, you won’t be disappointed.

What you will need:

  • A whole chicken
  • 2 to 3 tbsp grated fresh ginger
  • Tequila
  • Lime juice
  • Salt and pepper
  • Honey

How to Cook This Grilled Tequila Lime Chicken Recipe

  1. First, you need to marinate the chicken. You can use a whole chicken if you are going to cook it over indirect heat or on a rotisserie, or you can use cut up pieces if you prefer. Rub the chicken over all its surfaces with the grated fresh ginger. Then pour over tequila. You just need enough to coat it generously. You can also add some lime to the marinade as well, however this will start to cook the chicken a bit. If you do use lime in the marinade, only let it marinate an hour or two at the most. I’ve done it both ways and it comes out delicious either way. Cover and let sit in your refrigerator at least an hour and up to 4 hours. Pull the chicken out of the refrigerator a bit early before grilling to allow it to come up close to room temperature.
  2. In the meantime, prepare your grill and your basting mixture. Combine a small amount of tequila with lime juice, honey, salt and pepper in a bowl. You can taste for sweetness. It should be tangy with a hint of sweetness. If you prefer more sweetness you can use more honey. If it is too sweet, just add a bit more lime juice and tequila until it suits your taste. Mix thoroughly so that the honey is fully dissolved.
  3. When your grill is ready, season your chicken with additional salt and pepper. Throw on the grill or on your rotisserie. If you use a whole chicken on your grill be sure to cook it over indirect heat so that it cooks slowly and doesn’t burn. Be sure to cover to keep the heat in there.
  4. After a few minutes, start generously basting the chicken with the basting mixture. Turn the chicken periodically and baste all side, always covering the grill between each time.
  5. Depending on the size of your chicken, start testing for doneness after about an hour. You can use a meat thermometer to test the interior.
  6. Thats it! Just take your grilled chicken off the grill and cover with foil to let it rest about 15 minutes before carving and serving.
